How can I set pagegate so it does not send the from address in the subject line?

In the settings of your recipients, there is a checkbox that says "Don't Send from" and "Don't send from domain". Try checking both of those.

If I do that doesn't it suppress the from address from the from field too then?

It depends on which protocol you're using to send the messages. There's not really anything that can suppress the From field for SMTP messages. They're part of the protocol and will always be there.
